How to make sweet Jiu Niang and rice wine?
Shanghaines must know this famous desert, Tian Jiu Niang. It is made of glutinous rice and fermented by a kind of yeast. Since I move to Singapore, I seldom have changes to eat this delicious desert. Every time I went back Shanghai, my mom is sure to buy this desert for me. Now I know how to make it at home. I tried a few times. I recored the cooking procedures step by step in the following paragraphs.

1. Take 500g of glutinous rice and soak in water for a few hours
2. Either steam or cook the glutinous rice
3. Once the rice is ready, cool it till about 30degC
4. Then mix the yeast powder evenly into the cooked rice
5. Press the rice and make a hole in the centre, it is to make the rice wine flow to the centre later.
6. Cover with the lid and keep it for about 36 to 48 hrs in summer time
The steps are easy. The key point is not be contaminated by the dirty or oily hands or utensils, which may cause the bad fungus glow.
